Cream of celery with cider

Celery and apple; a truly tasty combination that gives life to this creamy velvety enriched with cider, cream and a pinch of cayenne pepper. try also this strawberry cheesecake slice recipe too.

Ingredients

Appetizer For 4 people

1 small onion

1 sweet apple, e.g. Gala

300 g of celeriac

2 tablespoons of rapeseed oil

3 dl non-alcoholic apple cider

6 dl of vegetable broth

2 dl of semi-fat cream

salt

Cayenne pepper

Preparation:

ca. 15 minutes

ca. 30 minutes

How to proceed

Chop the onion. Cut the apple into quarters, core them and set one aside to decorate. Cut the remaining quarters and celery into chunks and fry in a little oil. Add the cider and broth. Cover and simmer the soup for approx. 25 minutes.

Cut the apple quarter into thin slices and brown them in the remaining oil. Set aside. Remove 1 tablespoon of celery from the soup and cut into cubes. Blend the soup with the hand blender. Add the cream and simmer for another 5 minutes. Season with salt and cayenne pepper. Distribute the soup in the cups and decorate with diced celery and apple slices.
